Carrot cake in a mug - only to be shared with friends!

On Thursday and Friday of this week in the Jungle, the children have been making carrot cake in a mug.  But the deal was that they had to share it with a friend!  To my surprise, some children chose to share with 2 or even 3 friends, making their portion even smaller.  The recipe is easy peasy and it doesn't take long, cooking time is 2 minutes in the microwave - please try at home :)

Carrot Cake in a Mug 

Ingredients: (per mug)

3 tablespoons of All purpose flour

1 tablespoon of brown or white sugar
1/4 teaspoon of baking powder
6 tablespoons of buttermilk
1 tablespoon of cooking oil
4 drops of vanilla essence
1 1/2 tablespoons of finely grated carrot

Method:

• Mix all the dry ingredients together in a bowl - the flour, sugar and baking powder.
• Mix all the other ingredients together in a second bowl - the buttermilk, oil, vanilla and carrot.
• Put both mixtures together and stir well.  If it's too dry, add a little more milk until all the dry ingredients stick together.
• Put the mixture in a mug and cook in the microwave in high for 2 minutes.
• Enjoy warm with honey on top!
